I could really use a nap. Will someone cover for me if I curled up under my desk for a little shut-eye? I’ll forward my calls to your office and you can just tell them “She’s in a meeting.” How about it?
Oh. And you all give great advice. The family reading hour rocks. So, my next question is - who has an easy recipe for beef stew that can be cooked in a crock pot? Remeber: EASY is the key word. EASY.

I slept under my dads desk at work one time until he stepped on my fingers when he came back from lunch, and that hurt!

i often put cream of mushroom soup and lipton onion soup with a can of h20 in the crock pot with a roast. put in some carrots and celery and you are set. it’s more of a pot roast with a gravy, but it’s yummy.
Ok, here’s what you do.
Go to the Piggly Wiggly and buy:
1. Two giant cans of Dinty Moore Beef Stew
2. 1 can opener
Open cans, put in crockpot, set to low for two hours.
Serve with a side of KFC mashed potatoes. Can’t get any easier than that. I am indeed a great cook. No, really.

Um, that’s put the contents of the cans in the pot, not the cans. You can add the cans too, but take the labels off first.
Easy Beef Stew
1 can chicken broth
stew meat
carrots
potatoes
2 cloves garlic
olive oil
Can you tell I don’t measure when I cook?
Brown stew meat in garlic and a little oil. Dump all ingredients in crock pot. Cook all day. Easy enouth?
Throw stew meat, baby potatoes, baby carrots, and mushrooms and/or celery (these last two are optional) into your crock pot. Cover with one can of Campbell’s Cream of Celery Soup and then fill the can halfway with red wine and fill to the line with water and dump that in as well. (Out of wine? Use all water. But it’s better with wine.) Cook all day on low. Voila!
* 1 pound cubed beef stew
* 1/4 cup all-purpose flour
* 1 tablespoon paprika
* salt and pepper to taste
* 1 1/2 tablespoons teriyaki sauce
* 1 onion, chopped
* 3 carrots, sliced
* 1 stalk celery, sliced
* 2 potatoes, cubed
* 1/2 pound sliced mushrooms
* 2 cloves garlic, minced
put beef in slow cooker
Slow cookers rule!
mix together flower, paprika, salt & pepper & garlic, sprinkle on the beef, making sure to coat it. Then add teriyaki sauce and any veggies you use.
Obviously, any of the veggies are optional (except the potatoes), as is the garlic. Throw this in the slow cooker on low for 6-8 hours.
I wouldn’t know, but my husband LOVES this, asks for it all winter long! My daughter even eats it too! And it’s very very easy

Check your e-mail for the beef stew. It’s a lot of cutting and chopping, but then you toss it all in the crock pot, let it cook all day, and ta-da! Done! Tasty! Wonderful!
I got the recipe from my mom, and I love it in the winter with some nice crusty rolls.

Crockpot Beef Stew
Layer in your crockpot in this order:
1 - 1½ lb stew meat (I cut it small)
1 med onion, diced
4 med potatoes, peeled and diced
1 can carrots, drained
1 can green beans, drained (or peas)
1 can corn, do not drain
1 can tomato soup
1 can cream of mushroom soup
Make sure you layer everything in this order. DO NOT STIR. Turn on the crockpot and walk away. Stir before serving.
Cook on Medium for 8 hrs OR
Cook on High for 5-6 hrs

I’ve made it for Janet during one of our LOTR movie-thons and she loved it!
There’s a kit at the supermarket, I can’t remember who makes it. Its in the freezer section, made just for crock pots. I haven’t tried it yet, but it looks yummy and homemade. Beats all the chopping.
