After Every. Single. One. Of. You. recommended that I get a steamer when I mentioned wanting to eat fresh vegetables more often - I finally went and bought one. $15. Not bad at all. We ventured to the Fresh Market today and picked up some fresh produce and I steamed the crap out of it. AND I made rice. AND I baked some fish. Some Mahi. It was the first time I’ve cooked rice that wasn’t minute rice, the first time I’ve cooked raw vegetables, and the first I’ve baked fish not from Tysons. Can you believe it? ME? The one who only cooks things that comes frozen and in a box? I MADE THAT MEAL. I’m so damn proud. And it was so damn good. I’m a total rock star. Bob would be proud.

I am so jealous! I was just thinking today that we never eat “real meals” anymore - everything is either pasta or frozen. (We’ve been eating Stouffers lasagna for DAYS!) We even went to Fresh Market today to get some stuff and I almost got a bunch of veggies. . . but then I didn’t. Your meal looks so good, though - I may have to go out and do some more shopping tomorrow.
That is fantastic! It always makes me feel so good when I cook a fresh, healthy meal, especially since I don’t do it very often (fish sticks and tater tots at my boyfriends request for dinner tonight).
Bravo, girl! We have a steam cooker but its an annoying appliance and not a stove-top cool thing like you have there. Bah. I loves me some rice. Now if I could just get my boys interested in eating some fish, we’d be in business!
That looks yummy. I’m feeling inspired now. My husband will thank you for that inspiration. He loves a good meal like that. I guess he gets kinda sick of frozen pizza after a while.

Looks yummy! And if you want to make your life even easier, with even better results? two words: Rice Cooker. We got one a couple years ago and I’ll never, ever go back to rice in a pan the old way.
I have that same rice cooker. I bought it a few weeks ago at Target. Isn’t it cool? And I also discovered a new food last week that you can make in the rice cooker: quinoa. If you haven’t heard of it, google it; it’s extremely healthy and pretty tasty too.
Is that the red rice cooker from Target? I got that for Christmas! I haven’t had the chance to use it yet, but you make it sound pretty easy… and delicious.
Woo hoo! Good for you. Over the last three years I’ve been cooking more and more because I am tired of having take-out and frozen in a box all the time.
