Overly Excited and Possibly Out Of My League

A while ago I was asked to participate in a cooking challenge. (Go ahead…I’ll wait for you to finish laughing.) Actually, since I’m getting paid it would be more accurate to say I was hired to participate in a cooking challenge. (I know…just keep laughing…I’ll wait.) It was an easy concept: Develop a casserole recipe for under $20 that would feed 8 people and be made with Velveeta. And then submit that recipe to compete against four other bloggers all while documenting the entire process. (Okay, you really should have stopped laughing by now.)

Since my 101 things list included a task to do a recipe entry, I thought I can do this!

And then the next day I woke up and remembered: OH CRAP. I can’t cook.

I’ve actually been developing the recipe for a few weeks now so that when I turned in the final recipe, I would have worked out all of the kinks. By which I mean: Ask Everyone I Know To Help Me.

And y’all? Can I tell you the truth? I’m so proud of my recipe. Of course we all know that the other competitors’ entries will surely be much better since they’ve probably created their own recipes before. But still - I’m totally proud that mine turned out to be something I’ll actually cook many more times for my family! It’s something we all actually ate (the final version at least, some of the earlier variations were not edible) and enjoyed! I’ll give you all of the painful details of the process in the next four weeks. In the meantime…check out the other bloggers who are also participating. And then step back and laugh some more…because I’m totally out of my league here people.

Well…at least we can say I’m in good company. Good company that is going to make my poor little casserole look like cafeteria food when it’s all over with.

Stay tuned for all of the details of my creation. Also coming up: The silly questions I asked myself throughout this process like, If I salt this at all, do I need to include salt in my list of ingredients?

    I don’t think you’re out of your league AT ALL! You’re a lot more domestic than you think :)

    FWIW, regarding salt: I am not much of a salt fan. If the recipe uses, say 1/2 tsp or more, or is used to create some desired effect during baking, include it in the list of ingredients. If you just use it to season, you could just add “season to taste” at the end of the preparation instructions.

    I think your recipe challenge would have been difficult for me because I don’t think I’ve used Velveta for anything other than nacho type stuff. I’ll be curious to see what everyone comes up with!

    My husband would be better at a recipe challenge than me. I do better sticking to the recipes, but my hubby likes to make things up. I can’t wait to hear more about the recipe contest!

    As for the salt thing, I would just say “salt to taste” or something.

    Have you ever had fudge made out of Velveeta? Don’t puke. It’s actually, quite surprisingly, tasty. And I’m not a girl who likes people to mess around with my chocolate!
